mount retropie image remove some files and recreate image

A have a big 256GB retropie image that I want to mount, remove all PSX roms and make it fit in my 64GB SD Card.
I downloaded the image in ubuntu and I was able to mount it using
fdisk -l "VLC's Extreme Build V3b.img"
It shows me two partitions:
Device Boot Start End Sectors Size Id Type
VLC's Extreme Build V3b+ MBV6 256GB.img1 * 8192 124927 116736 57M e W95 FAT
VLC's Extreme Build V3b+ MBV6 256GB.img2 124928 61405183 61280256 29,2G 83 Linux
Mounting one partition:
sudo mount "VLC's Extreme Build V3b.img" -o loop,offset=$((512*124928)) /tmp/test/
So in /tmp/test I can see the rom files and deleted them. But how can I recreate the IMG file without these files to make it smaller?
